Before summer is over, I wanted to get in some last few bites of watermelon. Watermelon is 92% water, but the other 8% really packs a punch. It contains a healthy dose of vitamins A, vitamin B6 and C, lots of lycopene, antioxidants and amino acids! This "salad" is so refreshing, sweet and delicious!
INGREDIENTS

1 small watermelon
Juice from 1 lime
Fresh mint leaves
DIRECTIONS

1. Cut you watermelon into good sized chunks and place in a bowl
2. Toss the watermelon and lime juice
3. Roughly chop some mint leaves and toss into watermelon
4. Let the watermelon refrigerate for an hour! It tastes the best once it has some time to sit.
