Recipe: Quinoa, Peas and Pesto Patties







INGREDIENTS

1 cup uncooked quinoa/ 2 cups cooked
1 cup cooked peas
2 slices whole wheat toast (will turn into breadcrumbs)
1/2 onion, chopped
2 tablespoons pesto
1-2 eggs 
1/4 cup flour (not pictured)
salt + pepper to taste


DIRECTIONS

1. Cook the quinoa and allow to cool
2. Toast the bread. Turn into bread crumbs using a blender or food processor.
3. In a large bowl, combine the quinoa, bread crumbs, peas, chopped onion, pesto, and eggs. Season with salt and pepper and stir to combine. Add the flour last, stir to combine. 
4. Form patties with your hands (about the size of your palm). Be sure not to make them too thick nor to thin. If they are too thick they will not heat through, and  the texture will be off if they are too thin.
5. Put the patties on a plate or baking sheet and put in the refrigerator to set for 30 minutes.
6. Fry the patties in olive oil on medium heat, about 2-3 minutes on each side
