1/4 cup firm tofu, cut into small cubes
1/4 cup organic corn
1/2 organic red pepper, chopped
1 can organic kidney beans
1 tsp minced garlic
2 tbsp organic green onion, chopped
2 tbsp fresh squeezed lemon juice
1/4 cup olive oil
4 tbsp Rice vinegar
1 tbsp Sesame seeds
Salt to taste
Handful finely chopped cilantro

1. In a small bowl, whisk together the olive oil, rice vinegar, garlic and lemon juice
2. In a large bowl, combine the tofu, corn, red pepper, green onion, beans, sesame seeds and cilantro. 3. Salt everything to taste and pour the dressing on top, mixing well.
