Recipe: Rainbow Veggie Flatbread





        




INGREDIENTS

1 piece of naan, pita or flatbread
1/2 cup shredded Mozzarella cheese
2 cups total of fresh organic mixed veggies, chopped (I like broccoli, bell peppers, mushrooms,    
     carrots, red onion, olives, purple potato)
1 tbsp minced garlic 
4 tsp. olive oil
1 tsp. Italian seasonings
Parmesan cheese

DIRECTIONS

1. Preheat over to 425.

2. Lay your bread of choice on a baking sheet and add garlic and 2 tsp of olive oil on top, spreading with the back of a spoon. 
3. Add your cheese then vegetables- either making rows of each vegetable or simply mix all veggies together. 
4. Sprinkle Italian seasoning, Parmesan and salt on top. Top with remaining olive oil. 
5. Cook 20 minutes or until veggies are tender and the crust is golden brown.
